2 packages (8 ounces each) cream cheese, softened
1 cup smooth cottage cheese*
1 bunch fresh spinach
1 cup shredded cheddar cheese
1 lb. bacon, cooked and crumbled
1/4 cup chopped onion
1-2 garlic cloves, minced
1 round bread loaf
Boil spinach until cooked; drain and chop. Fry bacon in pan; chop into pieces. In large mixing bowl, beat cream cheese and cottage cheese. Stir in spinach, cheddar cheese, bacon, onion, and garlic; set aside.
Hollow out middle of bread loaf, leaving a 1/2 in. shell. Cube bread. Fill bread bowl with spinach dip. Wrap in heavy duty foil and place on a baking sheet.
Bake at 350F for 1 hour or until dip is heated through. Serve warm with cubed bread, crackers, and veggies.
*Original recipe calls for mayo. No one in the Price household is a fan of mayo so I replaced it with smooth cottage cheese and it tasted great!
